
Since a majority of my “Family” are in New Orleans right now. Thought I’d join them through writing about one of my absolute favorites desserts from there. Hope you enjoy reading and trying the recipes as I have.

Historically, beignets were brought to New Orleans by French colonists in the 18th century. They quickly became a popular treat in the city and are often associated with the famous Café du Monde, which has been serving beignets and coffee since the mid-1800s.
Beignets are typically made from a simple dough consisting of flour, water, yeast, sugar, and salt. The dough is rolled out, cut into squares or rounds, and then fried until golden brown. After frying, the beignets are often dusted with powdered sugar.
Over the years, beignets have become a staple of New Orleans cuisine and are enjoyed by both locals and visitors. They are often served as a breakfast or dessert item and are closely associated with celebrations like Mardi Gras.
While their history is closely tied to New Orleans, variations of fried dough pastries can be found in many cultures around the world, from Italian zeppole to African mandazi. Here’s a classic beignet recipe for you to try:
Ingredients:
- 2 1/4 teaspoons active dry yeast
- 1/2 cup warm water (around 110°F or 45°C)
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup evaporated milk
- 1 large egg
- 3 1/2 – 4 cups all-purpose flour
- 2 tablespoons unsalted butter, softened
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions:
- In a small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until foamy.
- In a large mixing bowl, combine the sugar, salt, evaporated milk, and egg. Mix well.
- Add the yeast mixture to the bowl and mix again.
- Gradually add 3 cups of flour, mixing to form a sticky dough.
- Add the softened butter and mix until well incorporated.
- Begin adding more flour, 1/4 cup at a time, until the dough comes together and is no longer sticky. You may need to use up to 4 cups of flour.
- Turn the dough out onto a floured surface and knead for a few minutes until smooth.
- Place the dough in a greased bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place for about 2 hours, or until doubled in size.
- Punch down the dough and turn it out onto a floured surface. Roll it out to about 1/4 inch thickness.
- Cut the dough into squares or rectangles using a knife or pizza cutter.
- In a deep, heavy pot, heat vegetable oil to 350°F (175°C).
- Carefully drop a few pieces of dough into the hot oil, being careful not to overcrowd the pot. Fry until golden brown on both sides, about 2-3 minutes per side.
- Using a slotted spoon, remove the beignets from the oil and drain them on paper towels.
- While still warm, dust the beignets generously with powdered sugar.
- Serve the beignets warm and enjoy!
Note: Be sure to exercise caution when working with hot oil, and never leave it unattended. Also, you can customize this recipe by adding a touch of vanilla extract or citrus zest to the dough for extra flavor.

- Divide the dough into portions based on the number of gourmet flavors you want to create (e.g., cinnamon-nutmeg, orange-zest-chocolate, nut-studded, and dried fruit-filled).
- For each flavor, incorporate the additional ingredients into the divided dough portions as follows:
- Cinnamon-Nutmeg: Mix ground cinnamon and nutmeg into the dough while kneading.
- Orange-Zest-Chocolate: Add the zest of 1 orange or lemon and fold in chocolate chips or chunks.
- Nut-Studded: Knead finely chopped toasted nuts into the dough until evenly distributed.
- Dried Fruit-Filled: Roll out the dough and sprinkle mixed dried fruit over it. Fold the dough over to encase the fruit and knead gently to distribute.
- Allow the flavored dough portions to rise for an additional 30-45 minutes, until they are slightly puffed.
- Heat vegetable oil to 350°F (175°C) in a deep, heavy pot.
- Shape each flavored dough portion into beignets as described in steps 10-12 of the classic recipe.
