I recently stumbled upon a delightful recipe for Vanilla Bean Scones, and let me tell you, the results were absolutely amazing! From the moment I took my first bite, I knew this recipe was a keeper. The scones were incredibly light, tender, and bursting with the rich flavors of vanilla.
To start off, the recipe called for a handful of simple ingredients, which I had readily available in my pantry. I gathered all-purpose flour, sugar, baking powder, salt, unsalted butter, vanilla, vanilla bean, heavy cream, and eggs. The vanilla bean was the star of the show, infusing the scones with its intoxicating aroma and distinct flavor.
I began by combining the dry ingredients in a mixing bowl. The all-purpose flour, sugar, baking powder, and salt were whisked together until they were well combined. Then, I took the vanilla bean and split it lengthwise, scraping out the seeds with the back of a knife. The seeds were added to the dry mixture, infusing it with the beautiful specks of vanilla goodness.
Next, it was time to incorporate the cold unsalted butter into the dry ingredients. I cut the butter into small cubes and added it to the bowl. Using a pastry cutter, I worked the butter into the flour mixture until it resembled coarse crumbs. This step was crucial in achieving that sought-after flakiness in the scones.
After the butter was fully incorporated, I created a well in the center of the mixture. In a separate bowl, I whisked together the heavy cream, vanilla, and eggs until they were well blended. This creamy mixture was then poured into the well, and I gently stirred it into the dry ingredients until a soft dough formed. It was important not to overmix the dough, as it could result in tough scones.

The scones were then placed in a preheated oven and baked at 375°F for about 10-12 minutes, or until they turned a lovely golden brown. The aroma that filled my kitchen was simply heavenly. I could hardly wait for them to cool slightly before taking my first bite. While they cooled I mixed together the vanilla bean glaze. It was hard enough not to just eat it alone. Once the scones had cooled slightly I added the glaze.
As I bit into one of the scones, I was greeted with a melt-in-your-mouth texture. They were incredibly light and flaky, with a subtle sweetness and a pronounced vanilla flavor. The specks of vanilla bean throughout the scones added a lovely visual appeal and enhanced the overall taste experience.
I enjoyed these Vanilla Bean Scones with a piping hot cup of coffee, and it was a match made in heaven. The scones had the perfect balance of sweetness and richness, making them an ideal treat for breakfast, brunch, or a cozy afternoon snack.
